People are always sleeping on the sausage but I think it’s one of the best items on our menu! It’s also the most technical and labor intensive, but it’s what separates us from most other barbecue places around. Not many places will take the time necessary to make homemade sausage links. Our jalapeño cheddar links are the perfect blend of smoke, heat, and cheese. I guarantee you’ll love them! Just look at that snap on that casing!!

If I’m not cooking barbecue you can catch me making some authentic Korean Fried Chicken or Korean BBQ. I’m pretty sure if I had to pick a last meal it would be this. Korean Fried Chicken with a honey garlic soy sauce, and also a sweet and spicy gochujang sauce. The flavor and texture just blows you away! Maybe some day we’ll do some special Korean food pop-ups. A little taste of Philly here in Bluffton, SC. Ever since moving down here I’ve been on a mission to find the best cheesesteak in the area. Not a “Philly”. A real cheesesteak. I’ve found a couple decent ones, and a really good one from @rockysnydeli in Savannah. They’re doing it right and get Amoroso rolls shipped in and use shaved ribeye. But here in the Bluffton area my searches usually left me missing home. Well that’s no longer the case! I’ve been able to make a real cheesesteak at home! I’ve been able to source a roll that some of the top cheesesteak places in Philadelphia use, and I shaved my own ribeye steak, grilled some onions, and did a mix of American cheese and cheese whiz. Real legit cheese whiz. Not any fake imposters that some places put on their menu. This thing was legit!! What do you think? Should we do a cheesesteak pop-up some time? The brisket cheesesteak sausages turned out well! I can’t call it a Philly Cheesesteak sausage because I don’t think it’s possible to capture a real Philly cheesesteak flavor in a sausage, and I don’t think it would be fair to compare the two! Calling it a Philly cheesesteak sausage wouldn’t do either justice, so I’m calling these Brisket Cheesesteak sausages inspired by a Philly Favorite sandwich! And coming off a huge Eagles win yesterday we set aside 6 packs of these special links if anyone is interested in trying them. They come in 4-packs for $20 each and each link weighs an average of 1/3lb. If you’re interested in some let me know!

Want to feed a lot of people, and still impress them without breaking the bank!? Try a pork rib roast! Dry brine it with salt a few hours before cooking or up to 24 hours and then slow cook it until an internal temperature of 145* degrees. Let it rest for 20 minutes and then crank your grill or oven up to 450-500* and sear the outside until you develop a nice crust. Well the time has come… After a lot of reflection and consideration over the last year we have come to the difficult decision that it’s time to explore options with our BBQ trailer. We have decided to put it up for sale, or possible lease, or partnership. Due to the current economy and some personal issues we do not have the time and staff to continue operating a food truck business. We love our community and all our existing customers and we hate to have to do this, but at this time it’s what we feel is best for us moving forward. We want to thank everyone who’s supported us the last few years, and we can’t thank you enough. Need to keep my brisket skills on point. The key to a good brisket is to start with a good trim job. Most people skip this step because they’re afraid to trim off too much and have too much waste. 3 days of preparation and cooking all coming together into this one final dish. I only had real ramen once in Hawaii, and I will have to say this bowl came pretty close to that first experience. I have a new found respect for ramen restaurants and chefs. I never knew how much time and energy goes into making a bowl of soup.

I know a lot of people are wondering why we haven’t been doing any pop ups recently. This is why. $5.50/lb for brisket. This same brisket 2 months ago would have cost around $60. The price increases on pork has been even worst. Pork butts and ribs have gone up 3x and now cost more then what brisket use to be. When you’re paying over $3/lb for pork butt, it’s extremely hard to justify prices that would be fair to the customer while at the same time leave enough money left over to pay for fuel, staffing, labor costs, and all the other misc expenses. I honestly don’t know how these restaurants are doing it right now with the way these food costs have been going crazy. All I can say is support your favorite local food spot, and be patient with them as they battle these brutal food costs and labor shortages. It’s not an easy time right now to be in the food and beverage industry.

If I’m not cooking barbecue, I love cooking Korean food. My new obsession is Korean fried chicken! Have you tried it? If not you’re missing out!! It’s amazingly crispy and flavorful and a must try! 📢 ANNOUNCEMENT 📢 Unfortunately due to the continued increase of meats prices and limited supply available we will not being scheduling any pop-ups in the near future. We love cooking for you all but with the current state of things it’s becoming more and more difficult to source product at an affordable price and we refuse to sacrifice the quality of our menu items to save a few dollars. We have seen beef prices go up almost 100% and pork prices are well over 100% compared to a few weeks ago. Prices of all other consumer goods have gone up as well. We have no idea when things will settle down (or if they will) but we are hoping it will be soon. We will re-evaluate everything in a few weeks and post an update here and on Instagram. Thank you all for understanding and you’re continued support!

Made some 80/20 ground brisket burgers then soaked them in @burntchurchdistillery Anita’s Choice Bourbon. Smoked them for an hour and then seared them off on a cast iron flattop. They were 🔥 🔥 Topped with some cheddar cheese, grilled onions, Pickles, and some House sauce.
